IBÉRICO ham is truly special accounting for only 10% of total Jamon production. This dark ruby red ham delivers the unique taste characteristics that comes naturally from a special breed of black Iberian pigs. The maturing time varies between 14 and 36 months.
The black Iberian pig is genetically predisposed to storing up fat between its muscles. This means the flavour from the fat is later absorbed into the muscles creating a smooth and marbled texture. Therefore IBÉRICO ham is more juicy, digestible and the flavour more intensive and durable. It’s known for its elongated shape and a narrower bone and usually ends on a black hoof.
